Canım Ciğerim

Writer: Rich Carriero

A classic revisited

This time-tested gem is particularly relevant in these economic times. Stop by and remember why Canım Ciğerim is and will always be a TOiST favourite.

Few restaurants in Istanbul offer the heaping portions of fresh vegetables and roasted meat that you can find at this hidden gem in Pera.  Ask for the “et portion,” which is the reason why Turks and expats come here in the first place.  Canım’s specialty meal begins with plates of fresh greens: arugula, mint and parsley.  You also get spiced raw onion, roasted vegetables and tomato salad.  Each person then gets ten skewers of absolutely delectable roasted lamb or liver.  The standard way to proceed is to take a piece of pliable flat bread and grip the meat, removing it from the skewer.  Top this makeshift durum as you so desire, adding a dash of cumin and red pepper before wrapping it up and eating.
You can spot the foreigners at Canım because they make a bloody mess of the whole affair while the Turks manage to deftly handle their wraps with three fingers and hardly lose a drop.  When you polish off your skewers or can’t eat any more, they simply wrap everything in your place mat and take it all away before offering a complimentary çay.
